Chicken Souvlaki
Chicken souvlaki is a classic Greek fast food dish that will make you feel like you’re on holiday in no time. Consisting of grilled skewered pieces of meat, you eat it hot straight off the skewer and can serve it with a variety of sides - we've gone for flatbreads and chips, with Greek salad and a good dollop of tzatziki.

If you want to get ahead you could marinade the chicken in the fridge overnight.

INGREDIENTS
FOR THE CHICKEN
8 skinless boneless chicken thighs
Zest and juice of 1 lemon
2 tbsp. olive oil
2 cloves garlic
2 tsp. oregano
1 1/2 tbsp. runny honey
2 tsp. smoked paprika
2 tsp. ground cumin
FOR THE TZATZIKI
250 g full fat thick Greek yoghurt
1/2 cucumber, seeds removed and finely diced
1/2 small bunch fresh mint, leaves picked and finely chopped
Juice of 1 lemon
1 garlic clove, crushed
FOR THE GREEK SALAD
1/2 cucumber, seeds removed and cut into half moons
250 g cherry tomatoes, halved
1/2 red onion, thinly sliced
1 red pepper, cut into thin strips
75 g pitted black olives (preferably kalamata), rinsed if needed
1 dried oregano
Juice of ½ a lemon
2 tbsp. olive oil
200 g feta, crumbled
TO SERVE
8 flatbreads
500 g frozen chips

DIRECTIONS
Preheat your oven to 240ºC (220º fan). Soak 8 wooden skewers in water. Line a large wide roasting tray with foil.
Cut each chicken thigh into 6 pieces and add to a large bowl. Add the remaining ingredients for the chicken, season and mix together until the chicken is evenly coated. Thread the chicken between the skewers (using 6 pieces of chicken per skewer). Lay these out on the foil-lined tray and roast on the top shelf of your oven for 30 minutes, until the chicken is slightly charred and cooked through.
While the chicken is in the oven, cook the chips to pack instructions.
To make the tzatziki, mix together all the ingredients, taste and season. Set aside.
To make the greek salad, mix together all the ingredients except the feta and season. Set aside.
When everything is nearly ready, warm the wraps in the oven until warmed through, 1-2 minutes. To serve, add 2 flatbreads to each plate then top with some of the greek salad. Top this with some of the crumbled feta and add some tzatziki and chips alongside and finally add 2 chicken skewers to each plate.
