Easy Fish Pie Recipe
If you're after an easy fish pie recipe, you can't really go wrong with our gorgeous version. Super easy to bake, and on the table in less than an hour, it's the ultimate dinner dish. Plus, it's oozing with melty cheese!

INGREDIENTS
1 kg potatoes, peeled and cut into 3-cm chunks
Pinch of salt
Freshly ground pepper
3 hard boiled eggs, peeled and quartered
200 g spinach
25 ml vegetable oil
1 onion, peeled and finely diced
carrot, peeled and finely diced
300 ml double cream
175 ml crème fraiche
350 g Cheddar cheese (200g for the sauce and 150g to go on top)
Small bunch flat leaf parsley, finely chopped
Small bunch of dill, finely chopped
Juice and zest of half a lemon
1 1/2 tsp. English mustard
400 g fish pie mixture (we used a combination of diced smoked haddock, cod and salmon)

DIRECTIONS
Preheat oven to 220ºC (200ºC Fan).
In a large saucepan of salted boiling water, add peeled potatoes and simmer for 10-12 minutes or until a knife pierces easily through them. Drain and mash, adding a little salt and pepper. Set aside.
In a large frying pan wilt spinach with a splash of water. When fully wilted remove from pan and squeeze out any excess water. Place in the bottom of a 1.5l ovenproof dish, along with the quartered eggs.
To make the sauce: add oil to a heavy bottomed pan and fry the onion and carrot over a medium heat for 6-7 minutes or until softened. Add double cream, crème fraiche, 200g cheddar cheese, parsley, dill, lemon juice, zest and English mustard, stir to combine.
Place the diced fish and prawns in the oven proof dish on top of the egg and spinach, pour over the cheese sauce. Top the sauce with mashed potato and sprinkle over the remaining cheese. Bake in the oven for 30-35 minutes, until the cheese on top is bubbling and golden. Serve with fresh, cooked greens.
